Vathals / Dried Vegtables Naturally Fiber Rich

We all know vegetables are fiber rich but dehydrated or dry vegetables like vathals have lot more fiber. For tasty preparation, 
  1.  Chop the vegetables into pieces.
  2.  Soak the  chopped pieces into butter mil.
  3.  Leave it for 12 hours.
  4.  Make this soaked pieces under the sunlight to dry.
  5. This way of preparation makes more tastier.

So celebrate them as equally as to vegetables.
Vathals can be made out of many vegetables.
Few things I remember,
  1. Cluster Beans / Kothavarangai
  2. Sundaikai / Solanum torvum (Turkey berry)
  3. Mangai / Unripe mango
  4. Kovakai / Ivy Gourd
  5. Maavadu or Young Mango
  6. Brinjal / Indian Eggplant
  7. Manathakali / Sukiti / Sunberry / wonder cherry /black night.
  8. Ladies Finger 
  9. Green Chilly
  10. Bitter Guard  etc
  11.
